Your kitchen won't match the test kitchen exactly
Every recipe here is written to be as clear as it can be, but your ingredients, your stove, your oven, your altitude and your own hand with a technique will all nudge the result one way or another. Treat the times and quantities as a reliable starting point you can trust, not as a guarantee of an identical outcome.
Safety at the stove is on you
Wherever a recipe calls for raw meat, poultry, eggs, dairy or deep frying, you'll find food-safety notes built in — safe internal temperatures, safe storage windows, that kind of thing. Those notes are given in good faith, but the actual handling in your kitchen is your responsibility: check that what you're cooking with is fresh, bring meat and poultry to a safe internal temperature, and throw out anything you suspect has turned.
One thing you won't find recommended here: reusing frying oil in unsafe ways, like pushing it past its smoke point again and again, topping old oil off with fresh indefinitely, or storing used oil carelessly.
This isn't medical or nutrition advice
Nothing here should be read as medical, dietary or nutritional guidance. There are no calorie counts or similar nutritional figures published on this site, and no ingredient is claimed to treat, prevent or cure any medical condition. If you're managing a food allergy, an intolerance, or a condition that diet affects, talk to a qualified professional and check ingredient labels carefully before you cook or eat anything here.
On regional and historical claims
Real effort goes into researching where a dish comes from and what regional context applies, but food history often travels by word of mouth and is sometimes genuinely incomplete or disputed. Where a claim isn't settled, this site aims to say so plainly instead of pretending otherwise.
